Hiroshima okonomiyaki 広島お好み焼き

Many foreigners would just think of sushi when it comes to Japanese cuisine, or that Japanese would eat fish very much. However the real joy of experiencing Japanese foods lies in something else. First of all dining style is different from Westerner's. There is so-to-say course menu which will be served at table in order but in general everything will be served at the same time from the start and they are eaten in parallel. Secondly it is to be enjoyed by eyes.

たくさんの外国人は、日本食と来ればすしを思い浮かべるだけか、日本人はたくさん魚を食べるということぐらい。しかし日本食を体験する本当の楽しみは別のところにある。まず食べるスタイルが西洋のものとは違う。いわゆる食べる順番に沿って出されるコースメニューというのもあるが、一般には最初から一緒に出されてすべてを同時進行で食べる。それから目で楽しむものでもある。

Hiroshima, beside her status as a peace symbol, has some specialities which we cannot go without mentioning: Hiroshima Carp (professional baseball team), okonomiyaki, momiji-manjyu and oyster. Okonomiyaki is surely the one which makes Hiroshima something special. It is so popular and there are more okonomiyaki shops in the city than cafes, it can be treated as snack or even main dish by local people.

広島には平和としてしての位置づけのほかにたくさん特色があり、それに触れないわけには行かない。広島カープ、お好み焼き、もみじ饅頭、それから牡蛎。このなかでもとりわけ、お好み焼きが広島を特別なものにしている。お好み焼きやは喫茶店よりも多く、地元の人にはスナックとしてでも、メインの食べ物としても考えられている。

Hiroshiman style okonomiyaki, so-to-say a pancake baked with vegetables and noodles all together on the huge teppan, metal plate. To select the noodle from soba or udon, and then topping is the usual ordering style. And its sauce, produced by otafuku is indispensable.

広島風お好み焼き、大きな鉄板の上で麺や野菜と一緒に焼いたパンケーキのようなもの。麺もそばかうどんかを選び、それからトッピングを選ぶというのが一般的な注文の仕方だ。そしてオタフクのソースは欠かせない。



Japanese would use chopsticks to eat, as is very familiar to many foreigners, but for okonomiyaki it is not the case. People are willing to sit at the counter and talk with shop people where they can watch okonomiyakis being cooked in front of them. It is more than just eating. They usually use spatula and eat directly from the metal plate and it can be the warm "dish" while eating. Without asking for chopsticks and dish, only spatula would be usually served for those who are at the counter.

日本人は、多くの外国人にも知られている通り、普通食べるときに箸を使う。しかしお好み焼きは例外だ。みんなカウンター席に座り、目の前でお好み焼きが作られていくのを見ながら店員と話をする。ただ食べるだけではない。ヘラを使い、鉄板の上から直接食べるのが普通だ。鉄板は食べている最中にお好み焼きを暖かいままにしてくれる皿でもある。特に箸や皿をお願いしない限り、カウンター席のお客さんにはヘラだけが手渡される。




It is not very easy to eat only with spatula from the start. To eat without dropping okonomiyaki on the counter table shows that you are already okonomiyaki freak.

最初からヘラだけで食べるのは容易ではないが、カウンターに落とすことなく食べられるようになれば、あなたも立派なお好み焼き通である。

Taipei night markets 台北夜市

I enjoyed going out for night market almost every day during my stay in Taipei to enjoy yummy foods. It reminds me of the one at Hakata, Kyushu Japan. There are also lots of attractions that might be seen at summer festivals in Japan such like shooting, golden fish catcher, pin ball and so on.

台北市での滞在期間中、ほとんど毎日夜市へ出かけ、おいしい食べ物を満喫した。九州の博多を思わせる風情が漂う。他にも日本の夏祭りの出店で見かけるような、射的、金魚すくい、ピンボールなどの出店が並ぶ。

There are lots of unfamiliar foods and some are similar to the Japanese one or it is easy to imagine how it would taste from the color and ingredients. I also found many Japanese things with the sign "日式"(Japanese style). Such as oden which is called in Taiwan 関東煮 guwan duon jyu and is also available at Seve-Eleven convenience stores exactly as same as in Japan, takoyaki, grilled flour ball with octopus and vegetables, 大判焼 ohbanyaki which is called 車輪焼 or 素焼.

見たこともないような食べ物がたくさんある反面、日本の食べ物と似たようなものや、外見や色からだいたいどんな味がするのか想像がつくものなどもある。さらには日本式と銘打った、日本の食べ物を出す出店もたくさん見かけた。こちらで関東煮と呼ばれ、セブンイレブンでも見かけるおでんや、たこ焼き、それに車輪焼、または素焼と呼ばれている、大判焼の姿も。


There are many nice restaurants in the city, but I preferred these shops at night markets to the usual restaurants; vital, active, casual, popular within local people and very reasonable or even cheap and of course very good. I tried many different kinds of foods and almost everything was good.
The markets I visited were 士林夜市 Shinlin night market, the biggest night market in Taipei, 師大夜市 Shida night market where I first tried 臭豆腐 cho-dofu and 寧夏夜市 Ningxia night market which was not very far from my hotel in Taipei city, rather small but friendly.

台北にはたくさん立派なレストランもあるが、レストランよりも夜市のお店に惹かれる。活気があり、普段着感覚、地元の人にも人気があって、そしてなにより値段が安い。たくさんの食べ物を試してみたがどれもおいしかった。行ってみた夜市は、台北で一番大きいといわれる士林夜市、初めて臭豆腐を試した師大夜市、それからホテルから程遠くないところにある、それほど大きくはないがこじんまりとしていてアットホームな感じの寧夏夜市。






If I dare to mention a several dishes, I would say 臭豆腐 choh-dofu, fermented tofu.

気に入った料理をいくつかあげるとすればまずは臭豆腐。発酵させた豆腐を揚げたもの。


It stinks but tastes wonderful. There are some stinky foods in Japan, too. The one which is quite notorious for foreign people, natto 納豆. And 蘿蔔餅 luo boh bin, fried mochi out of radish and taro.

結構臭うがとてもおいしい。日本にも臭い食べ物がいくつがある。外国人に悪名高い納豆もそのひとつだ。それから蘿蔔餅と呼ばれる、タロイモと大根を摩り下ろして揚げたもの。

Moscow last night モスクワ最後の夜

During my stay at my friend's home, I sometimes cooked breakfast for them, not especially Japanese, I just used what they had in their fridge. French toast, tomato omelette and salad and so on. They were still unfamiliar to them and my friend wanted to learn how to cook.

友人宅に滞在中、たまに日本食じゃなくとも食事を作ってあげた。ただ冷蔵庫にあるものを使って作っただけだが、フレンチトーストやらトマトオムレツ、サラダなど。それでもあまり馴染みのない味だったようで、どうやって作るのか聞かれた。

On my last day in Moscow I was asked to cook some Japanese dishes, I walked around the city trying to find some Asian food shop. Although there are looots of Sushi restaurants in Moscow and some other Japanese restaurants such as Udon shop, I was not able to find Asian food shop usually run by Chinese or Korean people quite easily seen in Vienna. I could have bought some very expensive ingredients at Japan shop, but I preferred to pick up usual things for cooking. Therefore I made curry for them which is still very unfamiliar to them. I brought a bottle of Gruener Veltliner with me, the most popular white wine in Austria.

モスクワ最終日、なにかしら日本食を作ってくれと頼まれた。街中を歩き回ってアジアショップの類を探すが、すしレストランやうどん屋さんなど、日本食が食べられるところがたくさんあるにもかかわらず、意外にウィーンによくあるような中国人や韓国人が経営するお店が見当たらない。日本食材を扱うお店で高い値段の素材を買って料理することもできたが、ありふれたものを使って料理をすることにした。それでカレーを作ることにしたが、それでも一般ロシア人にはあまり馴染みのないメニューだ。オーストリアからはとても一般的なグリューナーベルトリーナーを一本持ってきていた。

For salad, I mixed up sunflower oil they had at home for cooking and newly bought an inexpensive apple vinegar, added some pepper and herb. It seemed that it is also quite unusual for them to make dressing by themselves. They really liked that.
For desert I bought some yokan at Japan shop and served with Russian ice cream and coconut milk, which has a very natural taste of milk.

サラダ用に、彼らが調理用に使っているひまわり油とお店で買った比較的安いりんご酢を混ぜ、それに胡椒とハーブを混ぜてドレッシングを作ったが、これも非常に聞きなれないものらしい。とても気に入った様子だった。デザートには日本食材屋で買った羊羹とミルクの自然な味わい溢れるロシアのアイスクリームを添えてココナッツミルクをかけてみた。
