The last day in Biancavilla. I brought my green juice powder to breakfast table, Evelien seemed to get cold yesterday, I wanted her to try it. Carmela wanted to try it, too, and then also others. I told Carmila that she can just squeeze and make juice from vegetable and it is very nice for chronicle disease. I somehow expected a typical reaction of Japanese people who would try green juice, everybody drunk normally. It was a surprise to me, however nobody mentioned that it was delicious. It seems that there is a market chance for green juice in Europe. Many European think that Japanese dishes are very healthy and want to adjust their diet. This trend will surely continue for a while. I always said yes to eat more, Sergio first time cheated me when somebody asked me if I would like to have yogurt, and he brought me a huge bowl for yogurt, which I politely declined.
What a luck to have had nice weather, the last day in Sicily was sunny but rather cold. We started our work on our last day in Biancavilla to cut wooden bars for the fence which only had top railing, I cut vine branches that Kim and Evelien collected yesterday into appropriate length and band them with string for heating. High above the Mt. Etna clouds were moving very fast and seemed to be very windy. Evelien seemed to feel bad, we recommended her to stop working and go to bed.
For lunch, we had grilled chicken and bread, then Carmela asked me if I would like to have baked potato and scrambled egg from yesterday, I had it with pleasure. I look very slim, for them it seems to be a wonder where the food goes inside me. I just work much more physically than usual and I just need energy to keep myself neutral. I just eat what my body needs, I will eat much less when I go back to my usual routine life working at computer whole day.
As we talked about yesterday, we were to go to Mt. Etna in the afternoon. The clouds around the mountain was thicker than in the morning. Sergio drove us to the mountain without Evelien who slept in bed. Along the road we were able to see the lava which came out in 2003. When we arrived at the altitude of 1986m, it was really cold and very windy. We just took a short walk around crater while the chilly wind blew very strongly. It should be surely some minus degrees. In front of us there we saw a ski lift to higher up to the mountain. We were not able to have a fine clear view from the mountain over Catania or other cities, however it was very beautiful. Maybe the mountain is similar to Mt. Aso in Japan, but it is actually almost as high as Mt. Fuji. Sicily people should have a special feeling toward this mountain, as Japanese have a special feeling about natural disasters which frequently occurs in Japan such as typhoons or earthquakes.
We were all the time together wherever we went. After spending time for two weeks together, and not just enjoying our free time on a beach or excursion, but working together, we knew each other which kind of people the others were. It was really pity that Evelien was not able to come together due to her illness for our last activity in Sicily. I took some short videos from the car and at the crater so that she could also “experience” the mountain with us and bought her some postcards of Mt. Etna. Jan seemed to be pale during the drive up to the mountain and also down home. He told me later that he had the same almost 40 years ago when he took a bus. I remembered that an old friend of mine at elementary school who often got sick in a car and was not able to trip together with class mates in a bus. Just sharing time together sometimes has more meaning than what we actually do or see. Jan once seemed to feel better at least at the top and walked around the crater.
Carmela came back home and showed us a huge mushroom almost as same big as her face, saying sorry that she does not have fish. I told her yesterday that I love mushrooms. I have never seen such a big one. I am sure that I will never have a problem for food here in Sicily.
For today's dinner we had some more guests. We had a banquet. We enjoyed the food, wine and talk in the mixture of different languages: Italian, Spanish, English and Dutch. We shared tiramisu and strawberry ice cream cake, exchanged our Facebook accounts. Carmela aske me if I liked the mushroom while I was eating, I without saying any proper word but just “uuuuuummm” drilling my index finger on the cheek, she burst into laughter and showed others what I did. So big and thick mushroom but very juicy. I was sure that Carmela liked to feed me.
There are some reasons to learn a foreign language. For business, for vacation or just for fun. For me it was always the reason to communicate with other people. English might be the common language among people from different countries but it is surely not enough. People would learn my name much quicker if I use their mother tongue. Carmela wants Maria to learn some musical instrument, we talked about music education. She, our guest from Spain talked that the methods are not always important. She talked everything in Spanish and we in Italian, we knew what we were talking about. I added the point that as same as painting, playing musical instrument well needs us to be mentally mature. We can learn technique when we are young, but the matter is the interpretation for expression. Every expression comes from our heart.
Slowly the party was going to finish, women started to do dishes and some left for home or went to bed. The woman from Spain seemed also very tired after playing at schools and she told us that she could not play any more. I teased her that she would be able to play in 10 minutes. It took some time that the others understood what I meant. It was 7 to twelve. Then she fetched her violin from her room and started to play a piece from Bach's partita, only for five of us. It was already the next day. What a night! I will never ever forget the day.
Carmela and Sergio would leave home early in the morning, we greeted at the dinner table. I got a picture book by Sergio about carnival in his home town and a book about eatable plants by Biancavilla tourism information. Carmela was saying good night and forced me to promise her that I should take some good fish next time. I asked her if I should take some from Austria, she again laughed. Next time I would come here, I want to pray with them at meal without reading a piece of paper.

Hidden mosaik
We started our work to reorganize storage area where construction materials were just piled up, sweeping ground, removing soil dune on the flower garden. It was very fine today as yesterday, it should have been more than 18 degrees. Sun shined and no clouds, very comfortable to work outside to work in T-shirt. While I was sweeping ground and also stairs to the working tool storage, I just happened to find that there were mosaik buried at each step. They were not visible at all due to soil. I asked Carmela if she remembered who did each of them. Surprisingly she mentioned for each step so fluently children from which country did such as Belgium, Germany. That could have been long forgotten under the soil, I was happy to find it and continued to sweep the steps. They were very beautiful.
Sergio wanted to buy a saw machine to cut wood, Ton accompanied Sergio to the city to select which one might be suitable for his usage. While I was working at steps, Carmela came out of the house to call us for lunch. I almost forgot time for that.
For the lunch, we had pasta and bread, Carmela warmed horse mackerel from yesterday. I still cannot say pray without written text but it is now much easier to follow how others are speaking. Other Dutch members try to speak Italian much more than they did a week ago. They are European and have more chances to share information in common than I can with them for sure. I can know what St. Nikolaus day is, but I can never fill my memory in my childhood afterwards. This is the limit of the languages I learn which I can never manage. I was allowed to take two horse mackerels. While we were doing dishes, Carmela asked Evelien to feed cats and handed fish heads and rest of pasta we had. They have lots of cats and dogs, it is not so easy to feed only cats: dogs are also very hungry and try to take their foods. It was very fun to see that Evelien tried to let them go away but the dogs were trying to approach from the other side.
I continued to collect pebbles and throw them to where the pavement should be built, others started work with sawing machine to cut wooden piece to nail to wooden fences so no children would be able to go outside of the fence and fall into the vineyards. We worked until it became completely dark.
For dinner we had a guest from Spain, a violinist. She was in Biancavilla to play in schools for the weekend. She only spoke Spanish but we were somehow able to communicate in Italian. For the dinner, small penne with chanpignon which I was watching how Carlimela cooked in the kitchen, baked potatoes, and scrambled eggs. We had also cheese from the Netherlands which one of the Dutch members brought. The pasta was great, I have to try it at home. Already mentioned for many times, al dente is the most important factor to enjoy pasta. Nice Sergio's wine, nice food and talk. What else can we expect at a dinner table? Lots of people may spoil the possibility to enjoy such the intense and rich time by watching silly TV programs or show. I did not have any Internet connection since I came to Sicily, I again found the importance of the real world. To keep in touch with old friends or friends in distance, such the tools are very useful. But I do not want to waste most my time in digital world, it is much more imoprtant to share time and meet them and talk to each other in face. Any way, I got a reason to learn Spanish seriously.

Fish day 魚の日
It was too warm to think it was already in December. Carmela told me that in the northern part of Italy, it is very cold. Sergio had a problem with his foot, he was lying on his bed whole day. We started our work with piping, dig soil, get rid of stones and cover where plastic pipe for water we buried. It was a simple work but heavy on back. Stones we took from the soil, we put them on the pavement to-be. It can still hardly be called as a pavement nor path. Before noon time Carmela came up and told us that we have to have lunch alone while she would drive to the city to pick her daughter up, everything was ready for eating. And she also added, “Sachito! Today is fish!” which made me absolutely happy.
We put lasagna into the oven, Evelien and I warmed pasta from yesterday on fire, Carmela also put whole panne into the oven. Addinionally we had a piece of salad and roast potatoes, then Carmela asked if we need some portion of meat. Slowly Carmela started to think that we can eat endless. It would be much enough without additional meat. Physical labor brought us more hunger, I ate much more than usual since I came to Biancavilla. And of course what Carmela cooked for us is always good. After eating them, I asked the others if they wanted to have some coffee, I found only a small portion of caffee beans and was not able to find another can. It was very thin.
Due to Rocco's advice, we mixed cement and sand, then put them where the pipe were connected. After that, we flattened the entrance of the restaurant where water pipe had been buried. We swept the main pavement full of fallen leaves and dirt, put soil to make the level even. Without Sergio we stopped the work slightly earlier than usual.
I was in the kitchen and saw Carmela was preparing fish for cooking. She cut tail or pectral fin with scissors and the other fish was already ready to be grilled. She showed me the fish she was working on and asked me if I knew the one. It was horse mackerel. I told her that the yellow line on the side, we should get rid of with our knife in vertical direction and scrape it off, because it is very hard. She mentioned that it had very beautiful stripe and it was very fresh, I explained to her that Japanese people would see eyes of fish if they are fresh. She asked me of other fish. A big fish about 60 cm, some blue dots on side. Honestly I was not able to recognize it. Fish in Mediterranean sea may look different but I should know if I taste it.
We had dinner without Rocco and Raffaelle. Carmela told me that they do not eat fish. Sergio was there at the table, he still seemed to have problem on his foot. We had simple spaghetti with pepperoni, horse mackerel and a big fish. Looking at the meat of it and its color, it looked like mackerel, and it was. In Japan people would see how they eat fish to know how they had been grown up. In restaurants or in bistros, people working there would often say to me that I eat fish very clean. Only head, main bone would leave and nothing else. Maria was trying to take some meat from the big mackerel, I offered to help her. Took all meat off the fish body.
It is quite rare to see fish with whole body and head on a plate in Austria, except sweet water fish and many people do not eat fish skin. When I saw Agata stripping the skin, I told her that we usually eat all. She asked me if we also eat spine, so I told her that it depends on fish and how we cook, and for some fish it is also possible to eat spine, grill on the fire afterwards and would eat like snack. These fishes were very nice and I told Carmela that I never expected to eat fresh horse mackerel in Europe. Sure, the fish are quite popular in Sicily. I was totally happy with it. We ate up all mackerel and we had some horse mackerel left on the plate. Carmela asked me what she would do with it, I proposed her to cook rice and add horse mackerel meat. She promised me that we would do it for tomorrow for me.

Praying before meal
We started the day's work separately, Kim and Jan for storage house, Ton worked on electric box or cable which will be built in the wall, Evelien painted window frame and I dug water channel to bury pipes. Sun shined and it was warm. Evelien brought sun oil with carrot essence inside and we shared it and applied on our face, arms and neck, which she told us later that it was the wrong one for the usage. We also carried olive sansa bags that Sergio fetched when he drove Maria to school.
Mt. Etna had bigger cloud on the top than yesterday. The cloud yesterday was swirling around the top of the mountain, today it was like a dome on the top. The place where I dug trench to bury water pipe, there were lots of stones and was a hard labor. I sometimes had water and kept going on.
I am now in fit and can feel myself physically strong enough, maybe I am in better condition than when I was 10 years ago. Loosen the ground with an ax, then scrape out the soil and stone aside, I just repeated it for more than an hour or two. Sometimes small cats came and started to play nearby, had to pick them up to put them somewhere else, or I would through stones on them without knowing that they were.
Pasta ring with green bean and pork in demigrous sauce with cuscus. Both were really good, or actually everything Carmela cooked was very good all the time. She already started to tease me, I took the last portion of pasta in the pot and then tried to take sauce to my plate to eat with penne. She told me that I should take the whole plate for me. Eat well and work well, I felt really very good. Three days ago, I asked Carmela for the praying text before starting meal, she brought me a bible and showed me the page. I wrote them down on a paper and tried to say loud with the family, other Dutch members started to do the same by now. But it seemed to me that they have problems with pronunciation in Italian.
Amen
After lunch, we kept working as we did in the morning. Sergio fetched Maria from school and brought sansa bags again, it was finally the last transportation of bags. They will have a road to the storage house to transport anything they would keep there, Sergio wants to finish the work by the end of this year. Water channel, electricity, restaurant and road.
After having dug the trench, Kim and Jan helped me to bury water pipe. We had some discussion how to handle electric cable pipe, it was Ton who advised Sergio to avoid passing the electricity pipe on the place where gas tank would be buried. We stopped to work with pipes and then gathered small stones to put them on the street-to-be. It was already very dark. The day is getting shorter and shorter. We stopped the day's work.
Today they had guests in restaurant, Raffaelle was making pasta from semolina. Carmela was working hard on cooking some different kinds of dishes. The table at which we always have meal was occupied by fresh pasta. We sat in sofas in living room, Dutch members started to play soccer on X-Box.
Sergio called me and we went to the city to fetch Agata. Before that we procured propane gas bombe, bought some pieces of panne and cheese in gourd shape which I have never seen before. We had a late dinner, pasta in living room but without family members. They had been working for cooking for the guests. Al dente. This is the most important for cooking pasta. Any simple dish can taste good when it is kept properly.
We talked about many things about fire when we smelled something burning and was from boiler room. In the Netherlands, it seemed to me that they are using gas for heating. In Austria electric plate started to be more popular for cooking, for heating oil circulation. To build a gas pipe line is of course non sense to an isolated house. In my home town too, my parents are using gas provided by gas bombe.

Piping
Very fine weather from morning. But the the top of the Mt. Etna was surrounded by swirling clouds which looked like a hat on the mountain.
We started our work on the restaurant to-be, made room for electricity installation work, carried doors or wooden plates, mattress to other place. Jan and Kim started to joint rain pipes which leads rain fell on the roof of the storage to the main house, Ton, also a electric engineer started to dig the walls to build electric terminal box into the wall. Sergio, Evelien and I went to fetch sannsa hamp bags which we left at the collecting place, carried bags to the storage house. It was sunny and warm, very comfortable to work under the sun. A transporter car which we expected for the day was not available and we went to the collecting place and brought hamp bags back for several times.
Our lunch today was spaghetti in soup, chicken roll and baked mash potato. Carmela was surprised that I continued to eat while others finished eating, and mentioned that I am so thin although I eat a lot. I finished the chicken roll left on the plate and took some more baked mash potato which I liked very much. She should be happy to see that I ate very much every day. Especially the days when I carried heavy bags, I got very hungry and needed energy for the further work.
While we drove and back between collecting place and home carrying hamp bags, Sergio ashed us how we feel out his family and the project we joined. I honestly told him that I feel very comfortable to stay home with his family, sit at table and eat together, and especially found it nice that they always try to have meal together. Sometimes his children start to quarrel but they well take care of the youngest Maria. This might be a typical old Italian family. Even without their parents, brothers or sister would say Maria what she should do not, or sometimes scald her for what she had done. I mentioned that even parents nowadays cannot scold their children, the number of children reduced and parents take it wrong that what they are doing for their child as out of love but just spoil the child.
I translated what he said and I did to Evelien, then she told that she honestly expected more small children but really enjoys the work here. She started to understand more Italian Sergio would speak, at least she would grasp the context properly. She actually brought a kite with her as a present for children. Evelien told me about the story when we was playing some sport and was the only girl in the team, other team members called her Evert, a boy's name, because she is so active like other boys. Evelien is absolutely slim and I could hardly imagine that she did exactly the same as we do. I told Sergio that it was much easier for him that he did not have to prepare or think about tasks for girls. Sergio told me that he had female volunteer workers and French girls were relatively well built in general and were able to carry heavy things as other men would do. He agreed that a slim girl like Evelien would be able to work like this. She had got some blisters on her hands since we started to collect sansa. But she worked without complaining nor trying to avoid it.
Sergio asked me in the end, if I would like to have my own children. I answered to him briefly, although I would want it, I would have a problem in advance to find a partner in Europe and it seemed to me far from reality at the moment.
Sergio bought some pipe diameter reducers in the city and brought them back home, water channels were connected to each other. There are still lots to do. Will be all finished before snow falls? Honestly I would like to stay here and help them for their work. I really enjoy the work and meal with Sergio's family every day.
For the dinner of the day, we had soup, quiche with spinach, We had an extra bottle of red wine today, not only Sergio's wine as usual which all of us really love. The wine had a strong aroma and was very nice. Kim asked Rocco if it is possible to visit Mt. Etna because he had never seen volcano before. Well, after we finished all our work they thought of, my internal voice whispered. Let us see. After dinner soccer game on TV started from 21:00, but I was tired and watched just for some 10 minutes and went to sleep.

Sansa
We started our work with loading sansa bags upstairs. There were much more left at the place where we collected sansa and put them into hamp bags, we brought back only some with us. Bags were around 40 or 50kg, I assume, some are much heavier and we carried them in two. Then we started cutting wood in proper size for boiler which we gathered while cutting off branches of trees around olive trees for the better growth, mixing chip and sansa to feed boiler and nailing wooden plate to the wall of the storage house. As Jan is good at building houses, we worked in two groups, Jan and Kim worked on the storage house whose both side wall were still completely open to cover them with wooden plate, Evelien, Ton and I mixed chip and sannsa for boiler. While we were working, cats and dogs were playing around all the time. It was fun to watch while they were playing together. Two very little cats were so cute, a naughty dog which is always trying to tease other cats or dogs. Sometimes Dutch members took pictures while we were working. Well, we may not have chances to work on something like that. It is a rare experience including me. Physical labor brings us less stress than office work, for sure.
Today's lunch was risotto. We started our lunch time talk with rice issue. If Dutch people would eat rice a lot, which kind of rice there are and so on. Some years ago I saw huge rice fields in Novara in Piemonte which reminded me of Japanese landscape. When I told them about that and some of Japanese rice sold in Europe is from Piemonte, Sergio told me some other places in Italy where rice is produced.
After the lunch we started our work, going back to collect sansa again with Rocco, while Jan and Kim were working on storage house. We took some more new hamp bags with us, shaveled sansa into them. When we were back with fully loaded car in the back with hamp bags, it was already dark and Jan was working under the light. We again carried the bags upstairs. My hand slowly started to work well. I was finally able to grab a big beer glass with beer inside last week after being free from gips, and now I can do much more. It is still very weak and cannot grab like with my left hand, I have to take time for the rehabilitation.
There were some time until dinner might start. We gathered at dinner table and listened to the music in our mp3 players. I was reading a book or correctly saying I tried to read a book which I brought from home. Carmela saw me reading my book and asked if the book written in Japanese. It was a German book. I told her that it is true that with languages I was able to experience much more fun.
Maria called me from the kitchen waving her hand toward me. She was folding pancake and making crape and showed me.I stand beside Carmela while she was cooking and told her that I like really the pots she used for cooking. I carried cooking ceramic pots from Japan and we use them to cook soup especially in winter. Then she asked me several things, if I have my own family in Austria or I have already somebody. I told her that I am alone. It was quite natural for her to ask me why. I told her honestly what I had in my mind. She seemed to understand very well what I meant. I could have said some jokes upon her simple and honest question, but I did not feel like she touched my private issue, I felt quite easy to talk to her about it.
While waiting for dinner all of us was listening to the music in our mp3 players. Jan asked me if I knew Matsu Kaiko, Japanese musician, I said no. Then he showed me his IPod panel, it turned out to be Keiko Matsui, a Japanese female piano player whose CDs I like. I told him of one of her greatest hit album, and I also tried to remember the name of a Japanese Jazz pianist which I was not able to remember then. It was Hiromi Uehara which I succeeded to recall after some time.
Dinner was potato with pork, salad and sweets which Maria was working for. I also saw nameko mushroom on the table, it was marinated with olive oil and chili pepper. I see several regional dishes quite similar to Japanese, I would never have troubles with cooking if I were living in Sicily.

Olive factory
Carmela told us that winter had come. It was chilly outside.
After finishing collecting olive yesterday, we had no more work with olive. Today, we went to a place in Biankavilla where sansa is stored and we brought them back home. We stuff the sansa with shovel into hamp bags. During the simple work we found lots of larva of beetle or even beetle and centipede which Rocco warned us not to touch with bare hands. It reminded me of my childhood that I went to chip center to look for beetle larva, but it seemed that it was the first time to see them for some Dutch members.
Sansa should be dry according to Sergio, but I had no idea for what we can use the sansa. Sergio and Rocco had different opinion how “dry” it should be or the sansa we collected is suitable for them or not. There were some bags with holes, and I already knew how to say “no”, “bag with hole” or “thank you” in Dutch and I unintentionally made Dutch members laugh.
We took a short break around 11:00, we brought a basket with tea, fruits and pane with olive oil and garlic, which was just a simple one but really very good. I always thought till now that Italian pane is not suitable to eat in that way like French baguette but I had found an exception.
We piled up about 50 bags, once took them back home and take more hamp bags, we continued to stuff bags with sansa. When we back home again with bags on the back of the car, we put the bags on the wooden palette and covered with plastic film to avoid being wet by rain. It was almost the time for lunch.
We ate spaghetti, salad from yesterday and new tomato salad, and some bread stuffed with vegetables or ham and cheese. Seeing me take spaghetti and tomato on the plate at the same time, Rocco mentioned that Japanese would eat as American people, and for Italian people there is an order to eat. There was also a stuff which looks like terrine of meat on the table, Rocco asked me if I know it, which is called satto in Sicily. It was made of cows and pigs feet which are formed with gelatin. When I told him that we also cook the similar one but usually pig's, he mentioned that Italy and Japan are the same. Then Agata and Carmela asked me for example if we eat squid or black pasta, which will make our teeth and tongues black. I added that Japanese like Italian dishes very much and black pasta or risotto is quite popular in Japan, and that we usually eat organ too to make shiokara, conservation food. As Rocco asked me if we often eat organs, I told him about horulmon, Japanese expression which means “something to throw away”, organs and we often eat the part of meat which can never be served at good restaurants. He mentioned that Japanese would eat whales and about Green peace, and asked me if I had ever ate whale meat. I told him that Green peace is crazy, and he talked to his mother laughing what I said. I tried to explain about the issue that it is very pity that Japanese organization reported the fabricated number of whales they caught. However Europeans actually used the number of observed whales which Japanese ships collected for more than 30 years. It is not fair just to ignore without doing any research by themselves. Actually I wanted to say more but my Italian is still not good enough to tell them all properly.
I asked Carmela the question I had from yesterday, why she got to learn Shinto and it was just a surprise for me that she knew that, telling her that I can never expect such people in Austria. She told me that she reads Japanese novels very much and told me of the Story of Genji written by Murasaki Shikibu and also other Japanese novelists such as Kawabata, then she fetched books to book shelf to show me. But still she had not read Yoshimoto Banana.
I thought we would go back again to fetch bags we left after the lunch, Sergio drove us to a big storage where rice, biscuit or pasta is pile up which would be used for this coming Saturday. He explained to me that products or crops exceeding best period to be eaten, would be collected and brought to storages in whole Italy and sent to cloisters or people in poverty, Yesterday I had no idea about the event of Saturday which Sergio mentioned but finally it was very clear for me. I also explained to Dutch members what Sergio told us. Maybe we would help them to do something on Saturday.
After that, I again thought that Sergio procure a transporter to fetch olive rest bags and bring them back home, but he drove us to the olive company we visited yesterday. They were producing olive oil and machines were in operation.
Many cases that were filled with olives were piled up on wall, many people were also there to bring their harvest to have their olive oil done at the factory. We all took pictures of machines in work and waited for Sergio's olive would be processed.
It was of course the first time for me to see the fresh olive oil. It looked more green than that we can buy at supermarkets. The son of the factory's manager who explained us yesterday about the process, again explained the process flow with facility under operation. We ordered some bottles of olive oil, he fetched bottles and filled them from the storage tank, then took us to the room to cap, seal and label the bottle. Kim was allowed to do the work, it was very interesting. The olives which we collected in four days resulted in 54kg of oil, amount of 59.4 litters. It should have been a very bad year for Sergio with olives, but he repeatedly told us that good and bad year came in turn. I really wish that he would have a nice harvest next year.
For dinner we had soup, salad and big panne stuffed with something inside. Carmela already learned that I am very curious about anything, let me guess what might be inside saying that it should not be meat so that Evelien can also eat. It was stuffed with onion, leeks and something others, it was very delicious. Maria mentioned there is also some sweets, which Carmela corrected as desserts, a plate with donuts was served on which Maria worked. Again I wanted to thank her for that, I asked her if she wanted an origami frog. She once told me “tomorrow” but she changed her mind after some minutes, I asked her for paper. Carmela gave me a sheet of Kent paper, I made a frog. Kim asked me where I learned that, I explained to all of others that we would fold swan and collect 1000 then bring to the hospital if a classmate would stay in hospital for long time wishing his/her quick recovery. Nobody there knew “swan” and I did not know Italian word for that, I had to describe it and I was not sure if they got it. Maria asked me if I can do something else, I asked her if she knows Picachu and I can do that. Picachu is already universal. Maybe next week, I would have time to do that for her.

Olives
Today it was cold even without wind. During the breakfast, I listened to the conversation between Sergio and Carmela about what they could let us do for the day. Many volunteer workers may think that "they" are helping others. However, it is not so easy to let others work; preparation for that or plan changes are often necessary to share the work due to ability or knowledge of helpers. To do everything by own is usually much easier. Sergio and Carmela do not only think for themselves, they have effort even to change their plan so that we can enjoy our stay, experience the best we can have here. I really respect their consideration and generosity. I learned from their conversation that olive harvest this year might be extremely bad. They would have good and bad harvest in turn. We would maybe first collect the olives again and then fetch drinking water later, or eventually transport olives to a company where they process olives to oil. That was the outcome from their morning discussion. Of course to see the facility of extracting oil from olive should be very interesting for us.
We went to the area where we found some trees with lots of olives on our way back home yesterday. It was the third day, any of us already knew what and how to do with olives. Once started to work, it is quite easy to forget time. I continued to decipher Dutch and sometimes asked them the meaning of words they spoke. The area we collected olives today was flat and spacious. Each tree had more olives than ones of previous days, and we did not need to change locations so frequently.
Lunch times came at about 13:30 as usual. The typical Italian breakfast is rather light: bread or biscuit with butter, jam or honey and espresso. It is very different from the one in Austria or in Germany, ham, cheese and some salad, yogurt or serials. However when it comes to lunch, Italian people would take more time for that. Tomato salad, penne with lettuce and with /without sausage variation for Evelien, soybean with tuna and fried egg from yesterday. Franco worked on that and I especially like the penne today, confessed that I would like to try by myself when I would be back home. Then he explained to me how to prepare. And that it might be possible to add shrimps to it. I fully agreed to him that simple cooking is more delicious but only as far as „al dente“ is kept. In Austria, pasta will be often served too boiled and it spoils the taste. Yesterday Franco teased me that I was a nice teacher while I was explaining some Italian grammar to Dutch members. I can recognize by myself that I think more and more in Italian day by day.
We carried olives in plastic cases into the car, all of us plus Maria were in the car. Kim was in the back of the car to keep his eyes on olive cases during the drive to olive oil factory. After dropping Maria at fitness center, we went to the olive oil factory among narrow streets where Sergrio always uses. A young guy came up to us with a huge plastic case, we put all of our olives we collected in last two and a half days into it. It was just full for the case. People on the veranda of the building talked to Sergio and asked if this is the harvest from this year. It seemed to me that it was a surprise for the people working in the company due to bad harvest.
A cheerful man came up to Sergio and greeted in a very friendly way, and Sergio told him that we were here to see the facility. He started to show the facility and to explain process, then he called his son who speaks English. The son started to explain how the olives will be fed into the machine, vacuuming leaves and washing, smashing and then separating oil from the rest. According to his explanation, only 20 or a bit more percents of olive fruit can be olive oil, 20% water and about half of it is rest, so-to-say waste, which is called sansa. The man also showed us the sansa that it will be possible to extract oil by chemical process or it will be simply used as peletto for heating. We can get olive oil within a hour from the fruit, but the facility will be only operated tomorrow. We shall be back to the factory again tomorrow. On the way back, I asked Sergio about the harvest last year. He told me that the amount we had in the case today is about 160kg, and he got 640kg or some last year from 5-day collecting.
Coming back from the olive factory, we started to go to cut and collect branches of trees near olive trees so that olive trees can get more sun and grow. Jan is gardener and knew how to use chain saw. After Sergio's wish Jan cut branches and we carried them home where Kim and Ton cut them shorter for boiler. We worked until it got too dark to see, then Jan found that he lost his cellular phone somewhere. Jan did not remember his phone number, he called home with Ton's cellular phone to got the number. It was completely dark outside but they went out together to look for his cellular phone, letting his lost cellular phone ringing to let them know where it is. After some 10 minutes, they came back with the phone. Raffaele was playing drums on music in the garden with fine night view over Catania city. Who else in the world can have such a situation to play music without caring the sound leaking and reaching to neighbors?
All of family members except Sergio left home for their uncle's birthday party, we had to prepare something to eat by ourselves. We just simply cut vegetables for salad, Franco started to cook vegetable before he went out with all others. Carmela brought some special sausage back which sounds quite similar to my first name. On the table Dutch members started to research what to do for weekend. I had no idea what to do and told them that my Italian friend recommended me to go to Taormina which is not very far from here. I talked with Sergio in the kitchen while I was adding olive oil and balsamico to salad, what might be possible to do for us for weekend. He mentioned that there will be a special religious event or something in whole Italy on Saturday and maybe it might be better to avoid Saturday to travel to somewhere.
While eating, we talked about foods. Kim told us that he will not eat chicken because of antibiotic fed to them to make the meat look well, mentioning the situation in the Netherlands, explaining that hens would be raised in very bad conditions. I told him that it must not be always true and it just depends on how hens will be raised and not all of chicken in the market, consumer should be responsible for what they choose. Sergio explained the situation in Italy or in Sicily. I also added the situation in Austria that more and more Bio products have appeared in the market which might be much more expensive than to buy them at supermarket chain. And to get BIO product certification, farmers have to show different kinds of information to public for the traceability of their products.
Kim told the story that farmers in the Netherlands can sell for example eggs with much money just by stamping marks on the shell, they might be able to make a fake BIO eggs. Evelien also said that some Gouda cheese will be processed in China and only the final check or packing will be carried out in the Netherlands. The situation in Austria seemed to me much better than in the Netherlands due to their assumption or explanation. Sergio honestly told that Bio products are actually too expensive for them, but he is also a farmer and sells his crops at open market directly to customers. And actual problem might be that the products can be imported or processed in many countries by the help of current useful transportation which makes customers blind from what is really good or not. Tomato can be really delicious when it will be harvested in summer.
Sergio also gave us a further information about an organization where people can procure safer foods by purchasing as a group. This is the principle of number in the market, the more products are there, the less it will cost. For such serious discussion I had to translate Dutch members' questions into Italian and Sergio's Italian to English which was not very easy for me.

Amaro
This day, from the early in the morning, I say, around 5:30, I saw sun shined from the window. It was rather windy and therefore it was very cold. Getting outside under sun light, the Mt. Etna looked very differently from yesterday: it had much more snow on the top. It should be very interesting to observe the mountain every day.
During the breakfast, Sergio talked about Sicily. Majority of the people in the world would automatically connect Sicily to Mafia without thinking. He told us about the history how the island had been involved or contacted by other cultures or tribes. He mentioned that the island appeared in the Odyssey by Homer, ancient Greek time myth, then was a part of Spain and Germany, The first university was built in Palermo in collaboration with Arabs in around 1000 A.D. And mafias were forced to change their „job“ as time changed to, rather non-violent ones: drug handling, construction or post treatment of materials such as toxic chemicals. He also mentioned the attraction that tour buses would be attacked by show Mafia, because tourists are expecting something of mafia when they come to Sicily. This is an irony.
We started to follow the work from yesterday, only Kim was asked to help Carmela in the kitchen for a while, the rest of us went up the hill a bit more to collect olives. There were much bigger trees around there, we spread the sheet under the tree and pick olives by hand or let them fall by rake. We needed more time on one tree than yesterday. I had been listening to the others while they spoke to each other in Dutch. It was strange, it sounded a bit different from yesterday. It sounded often like English, so-to-say mixture of German and English. Maybe this assumption should be correct, my ears somehow got used to its sound, sometimes I was able to understand a complete sentence. We were talking about yesterday what we would do the next day. Actually Sergio has many olive trees enough for five of us to work for a several days.
Sometimes sun shined and disappeared in clouds, I felt warm and cold in turn. We worked until around 13:00 and went back home, one big basket and a small one were full of olives; we forgot to take hemp bags with us. The sky over the Etna was totally black and it seemed that it might rain soon. At home we saw Rafaelle working on objects for restaurant. He told us that the wind from Africa might bring very bad weather, but the wind from the Etna should not be too bad. This is the expression of local people. I had no idea which direction was toward Africa. He showed us his object which would represent Vietnamese market on boats. He bound a bunch of bamboo trees with wires to the separation of the restaurant and cut out Styrofoam in the shape of front nose of a boat. Additionally a seller on the boat with bamboo thatched hat. It seemed very interesting. He had an idea to split the restaurant in three parts and each of them should represent different country. I just wonder which countries other two might be.
I asked Carmela when the lunch time might be and if we had enough time to go back and work on collecting olives for a while. She told me it should be ready in 30 minutes, so we stayed outside and sat at the table outside with a fine view toward „Africa“. Africa is too far away to catch in sight though.
We saw a guy on orange KTM came up to us, asked me if Sergio or Carmela was at home. I told him that she was cooking in the kitchen. I went down to KTM to see. While we were waiting for a while for lunch, I talked with the KTM guy, Giuseppe. He talked about his fourth KTM and its great performance. And of course among motorcyclists it is almost impossible to go without mentioning Japanese motorcycles. I talked him that KTM main location is quite near to where I lived before and the company is our customer. Then I mentioned which motorcycle I had before. He told me that racer type would not match the usage in Sicily where roads are not only flat. That KTM should be one of the optimal solutions to it for sure, if the price does not matter.
Franco who joined the conversation with Giuseppe later asked me if I am Korean and how I got to speak Italian somehow. I told him that I took several evening language courses in Austria and had also been to Florence for Italian lesson.
For the lunch, we had tomato salad, aubergine marinated with vinegar and olive oil which Kim could have been cut, and penne. We were talking if there were meat inside penne because Evelien does not eat meat. We started to find a word tuna in Italian or Dutch or vice versa and Carmela „stopped“ our conversation saying that it is not fish. I saw Evelien giving her portion of penne on Kim's plate sitting next to her. Carmela, to my imagination or assumption, a typical „manma“ in Italy. Just in two days we all loved her cooking. After enjoying eating, she offered us coffee as all of us expected. I told her that we were waiting for the very word and patted the table. All of us learned a new Italian word. „Amaro“, and at the same time I learned that „bitte“ in German is as same as in Dutch. Italian coffee is excellent and I love it. Dutch members started to look for the word “amaro” in their Italian phrase book for tourists, Evelien asked me if I knew the word. Actually I have never heard that before but it should be as same as „prego“, which they were able to find in their book. Franco, watching our conversation and then asked us if we wanted to try Amaro, Sicilian digestive. I have heard of it but never tried before. It was like weak Jaegermeister or Yohmeishu. sweet.
Going back to work, we sometimes took pictures of beautiful scenery around there. Stone piled-up walls, roof panels or vineyards. It is especially beautiful while sun shines. We continued to collect olives from tall trees by using rake with long hand grip or ladder. Evelien asked me to repeat my name. She tried to pronounce my name, but it seemed to be „shazito“ or „sachicho“ even „shachicho“. For Kim it was almost the same. It was quite interesting that all of Dutch members said that my family name is much easier than my first name, while my family name seems to be too difficult for Austrian people. Sergio joined us to collect olives for a couple of hours and then we called it a day before it started to get dark. Sergio and I watched if there were some olive trees with many fruits for tomorrow while going home.
At home, Franco was cutting lemons and pears, putting them into huge pots. It looked like he was making jam. We sat at the table and Kim asked me to help them for some Italian phrases or words. I talked about basic endings for Italian nouns for singular and plurals for both genders, words like today, tomorrow, hour, day, week, delicious, I am hungry, I got tired... Then Evelien went back to her room and fetch some paper to write. She asked me to give her translation of important Italian phrases but I told her that she actually had to know what she wanted to say. I had to tell her how to spell the Italian phrases I translated upon her request, and noticed that we had problems about spelling. This might happen even in German. Letter such as "a" or "i" can be misunderstood by "i" or "e" respectively. I have never learned Dutch before and learned how to pronounce „g“ in Dutch yesterday. There should be some more differences from German.
Carmela and Maria came home with boxes filled with lots of lemons and pears for making jam. Carmela called us from the kitchen to take pictures of Maria while she agitated jam in the pots. Ton and I helped Sergio to carry boxes with fruits into the house. It was surely not for a day, but jam for their restaurant. I put olives into plastic case from hamp bags with Sergio and then I swept the steps in front of the house. While we were looking for more plastic cases for olive in boiler room, I found files of papers in a plastic case. Sergio told me that it was from his previous job as designer for 25 years. Maybe I have to ask him more about his drastic career change.
I came back to the table to find that Dutch group were cracking hazel nuts while Ton was checking his working schedule. I started my finger rehabilitation with my rubber ball. Sometimes Maria or even Carmela came up and pick some hazel nuts which Dutch members took out of the shell. For more than an hour, Jan, Evelien and Kim kept cracking hazel nuts and then dinner was supposed to be ready. I swept the floor where hazel nuts shell were scattered around.
I wanted to thank Maria for her apple pie yesterday, I started to fold lily. Many people in Europe at least know the word „origami“ and it was not the exception for the others around the table, however it was their first time to see in live. Carmela found me doing that and sat at the table to watch it while Sergio called her several times for finishing preparation. I just let them guess what it can be when they asked me what it was. Also Maria's sister Agata joined. Maria said ship, frog and so on and as I kept working and it started to be in the final form, she mentioned flower and also Carmela. I rolled the petals with pen which I asked Carmela to give me. Maria seemed to be very delighted „Che bella!“ I can do some but I especially like this lily because of the shape. I told Maria that she had to water the flower every day and she said laughing that it would maybe grow.
For today's dinner we had tomato salad, penne which Carmela mentioned that it was newly done, and fried egges with leeks. As same as yesterday I observed lips of Italian nearby and tried to follow their words of praying. That should be the phrase which I often saw in American movie in 50's that they thank god for giving them the food for the day, but in Italian language. I asked Sergio to write them down for me. I told the others that Japanese version goes much quicker saying „itadakimasu“ and just meet our palms. Then Carmerila asked me about the Japanese religion and if I am Buddhist. She has a friend from Thailand. I explained in Italian and English so that everybody there can understand that Japanese religion is the mixture of so-to-say religions. It was a surprise for me that Carmela said promptly „shinto“. How she got to know that, I have to ask her again.
After the dinner, they continued to make jam, I joined them to fill plastic cases with hot jam and put on the table to cool them. The pots were huge and told Raffaelle that I do not expect to see such the big one except in a restaurant, but he said, in Sicily where they have big family, it is not a special size. When we all finished the jam, it was already 23:40. It was fun to see how they made jam. Carmela promised that it will come to the breakfast table tomorrow.
